My favorites are

VanVleck in Montclair for azaleas & Rhododendron and a monster wisteria in late-April
the Presby Iris in Upper Monclair (around Mother's Day)
Colonial Park for roses and touch&smell garden (and the best mini-golf course) - mid-June
While you're there its only a few miles to the Old Millstone Forge Museum if you're there on Sunday from 1 to 4.
and once a year it's worth the trip to Grounds for Sculpture which has good musical events too

Watchung Art Center
The Watchung Art Center offers art classes throughout the year. There are special music programs. In the summer, an all day art camp is available.

Liberty Science Center

Jersey City

LSC is off exit 14B of the NJ Turnpike (about a 35 minute drive) the LSC has an OMNI MAX and lots of hands on science learning.

Thomas Edison National Historical Site
West Orange
The site has some wonderful interactive things to do in preparation for a visit too.

Park Rangers give tours of Edison's laboratories where he did his work in the last 20 years of his life. Many things are exactly as he left them when he died.

Mobus Field, Watchung

With Jungle-Gyms, swings, ducks and geese to feed, Mobus Field is a favorite hangout for Watchung folks. In the summer the Watchung Recreation Commission organizes a camp for school age children.

Echo Lake Park, Westfield
The park is lovely. It offers better than average jungle-gym equipment,. and if it is not too cold, pedal boats are available for rent. In the summer, there are free concerts on Wednesday.

Miller-Cory House

Mountain Ave, Westfield
Miller-Cory House museum creates the atmosphere of an 18th century farm. It is open every Sunday, except holiday weekends, between 2 and 5 p.m. from mid-September until mid-June.
